Pumpkin Muffins
One of the first recipes I make when the first cool weather of autumn comes around are these pumpkin muffins

Ingredients:
- 1 cup canned pumpkin
- 1 1/4 cups sugar
- 1/2 cup water
- 1/2 cup vegetable oil
- 2 eggs

- 1 2/3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- chocolate chips, raisins or nuts (optional)
 
Directions:
- Preheat oven to 350
1) Combine first five ingredients well.
2) Add dry ingredients, reserving flour to last, mixing well.
3) If desired, add chocolate chips/nuts/raisins.
4) Spoon into muffin tins (lined or no-stick).
5) Bake for 25 minutes.
6) Cool ~10 minutes.

Alternative: Pumpkin Bread - 9"x5" loaf pan - bake for 60-70 minutes
